Cinnamon Crunch Blueberry Banana Bread

Ingredients
  

Banana Bread
  • 1 ripe banana mashed
  • 1 tsp cinnamon powder
  • ½ cup melted butter
  • 2 eggs
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 ½ cups flour
  • 1 cup blueberries
Cinnamon Crunch Topping
  • ¼ cup melted butter
  • ¼ cup white sugar
  • ½ cup flour
  • 1 tbsp cinnamon
Optional Glaze
  • ½ cup powdered sugar
  • 1 tbsp milk

Equipment

  • Mixing bowls
  • Fork or potato masher (for mashing bananas)
  • Measuring cups and measuring spoons

Method
 

Preheat the oven.
  1. Preheat your oven to 350°F / 175°C. Grease or line a loaf pan with parchment paper.
Mash the bananas.
  1. In a large mixing bowl, mash the ripe bananas until smooth.
Mix the wet ingredients.
  1. Add the melted butter, eggs, vanilla extract, and brown sugar to the mashed bananas. Mix until well combined.
Add the dry ingredients.
  1. Stir in the cinnamon powder, baking powder, and flour. Mix gently until just combined. Do not overmix.
Make the cinnamon crunch topping.
  1. In a separate bowl, combine melted butter, white sugar, flour, and cinnamon. Mix until a crumbly topping forms.
Assemble the loaf.
  1. Pour the banana bread batter into the prepared loaf pan. Sprinkle the cinnamon crunch topping evenly over the top.
Bake.
  1. Bake for about 50 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
Cool and glaze.
  1. Allow the banana bread to cool before drizzling with glaze, if using.

Notes

For extra flavor, use very ripe bananas with brown spots. The riper the bananas, the sweeter and softer your banana bread will be.
Do not overmix the batter once the flour is added, or the banana bread may turn out dense.
You can add blueberries, chocolate chips, or chopped nuts if you want to make it extra special.
