Strawberry Crumble Shortcake Cookies

A buttery soft cookie, with a hint of vanilla, melty chocolate chips (because we’re a little extra over here), juicy strawberries baked right in, AND a golden crumb topping that gives bakery vibes without the bakery prices.

Ingredients
  

For The Crumble
  • 3 tbsp melted butter
  • cup all-purpose flour
  • 4 tbsp brown sugar
For The Cookies
  • ½ cup softened unsalted butter
  • ½ cup brown sugar
  • cup white granulated sugar
  • 1 large egg at room temperature
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 7 large strawberries or 3/4 cup diced
  • ½ cup chocolate chips

Method
 

Crumble
  1. For the crumble, we add 3 tbsp of melted unsalted butter, 1/3 cup all-purpose flour, and 4 tbsp of brown sugar. Mix until you get to a crunchy crumble texture.
  2. Transfer the crumble into another bowl and set aside.
Cookies
  1. In a bowl, add 1/2 cup of softened unsalted butter, 1/2 cup brown sugar, and 1/3 cup white granulated sugar. Mix.
  2. Add 1 large egg at room temperature. Mix into the batter.
  3. Add 2 tsp of vanilla extract and mix into batter
  4. Add 3 cups of all-purpose flour. 1 tsp of baking soda, and 1/4 tsp of salt into your batter and mix.
  5. Wash, hull, and slice all strawberries, (3/4 cup when diced or roughly around 7 large ones). Then add them to your batter. (You can set aside some pieces to decorate the tops of your cookies).
  6. Totally optional, but how can we have strawberries without some chocolate? Treat yourself to 1/2 cup of semi-sweet chocolate chips directly into that batter.
  7. Mix, mix, mix
  8. Using the strawberry pieces you set aside and your crumble, decorate the cookies (2-3 strawberries and about 1 teaspoon of the crumb topping on each) before placing them into the oven.
  9. When you’ve finished decorating, place, bake for 15-20 minutes, until the cookies are puffed and the edges are set and lightly firm, while the centers remain soft.
