Like… imagine a buttery soft cookie, a hint of vanilla, melty chocolate chips (because we’re a little extra over here), juicy strawberries baked right in, AND a golden crumb topping that gives bakery vibes without the bakery prices.

These cookies are basically if a strawberry shortcake and a chunky bakery cookie had a baby… and that baby is thriving.

What Ingredients Do You Need To Whip Up These Cookies?

  • Brown Sugar
  • White granulated sugar

How to Make Strawberry Crumble Shortcake Cookies

STEPS

Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.


I.

Butter, Sugar, Flour

For the crumble, we add 3 tbsp of melted unsalted butter, 1/3 cup all-purpose flour, and 4 tbsp of brown sugar. Mix until you get to a crunchy crumble texture.

Transfer Crumble

This is what the texture of the crumble should look like. Transfer the crumble into another bowl and set aside.

Butter, Sugar, Mix

In a bowl, add 1/2 cup of softened unsalted butter, 1/2 cup brown sugar, and 1/3 cup of white granulated sugar. Mix.

Egg

Add 1 large egg at room temperature. Mix into the batter.

Vanilla Extract

Add 2 tsp of vanilla extract and mix into batter

Flour, Baking Soda, Salt

Add 3 cups of all-purpose flour. 1 tsp of baking soda, and 1/4 tsp of salt into your batter and mix.

Strawberries

Wash, hull, and slice all strawberries, (3/4 cup when diced or roughly around 7 large ones). Then add them to your batter. (You can set aside some pieces to decorate the tops of your cookies).

Chocolate Chips

Listen, this is totally optional. But how can we have strawberries without some chocolate? Treat yourself to 1/2 cup of semi-sweet chocolate chips directly into that batter.

Mix That Batter

Mix, mix, mix

Decorate

Using the strawberry pieces you set aside and your crumble, decorate the cookies (2-3 strawberries and about 1 teaspoon of the crumb topping on each) before placing them into the oven.

Bake

When you’ve finished decorating, place, bake for 15-20 minutes, until the cookies are puffed and the edges are set and lightly firm, while the centers remain soft.

Result.

Here are the end results! (If you’d like a drizzle frosting, mix 2 tbsp of powdered sugar, 2 tsp of milk, and 1/4 tsp of vanilla extract). Enjoy!
